Peruvian   -   Causa De A La Limon   adapted from Hot and Spicy by Marlena Spieler

  • 8 Medium Shrimp
  • 1 Slice Lemon
  • 1 Medium Sweet Potato -- peeled & diced
  • 5 Large Baking Potatoes -- peeled & quartered
  • 1 Medium Onion -- finely chopped
  • 3 Lemons Lemon Juice
  • 1/4 Cup Olive Oil
  • 6 Medium Tobasco Peppers -- chopped
  • 1 Teaspoon Red Pepper Flakes
  • 1/2 Teaspoon Salt
  • 15 Medium Greek Olives
  • 4 Ounces Monterey Jack Cheese -- diced
  • 2 Medium Hard-Boiled Eggs -- quartered
Directions Cover shrimp with water, add leomn slice. Bring to boil, cook until just plink. remove from heat, cover, set aside.
Cook both types of potatoes until tender.
Drain and mash them. Add onion, lemon juice, olive oil, tobascos, red pepper flakes and salt. Garnish with shrimpolive, scheese and egg quarters. Serve hot.
