Peruvian   -   Papas A La Huancaina (Peru)   adapted from Latin American Cooking

  • 1/4 Cup Lemon Juice
  • Salt And Pepper -- to taste
  • Cayenne -- to taste
  • 1 Medium Onion -- chopped
  • 8 Medium Potatoes -- boiled
  • 3 Cups Muenster Cheese
  • 2 Yellow Chiles
  • 1/2 Teaspoon Turmeric
  • 1 1/2 Cups Cream
  • 1/3 Cup Olive Oil
  • Lettuce Leaves -- garnish
  • 4 Hard Boiled Eggs -- garnish
  • 8 Black Olives -- garnish
Directions In a bowl, combine lemon juice, salt, pepper, cayennne, and onion. Set aside for 1 hour to pickle. Boil potatoes. Drain peel and keep warm. In food processor, combine cheese, hot peppers, turmeric, and cream. Blend until smooth. Heat oil in skillet. Add cheese mixture, stir until smooth. Line platter with lettuce leaves, Place ptotatoes on that, pour sauce over that. Arrange eggs & olives atop artistically. Drain onion mixture and sprinkle over dish.
