Peruvian   -   Papas Con Salsa Queso (Peru)   adapted from peasant cooking

  • 12 Medium Potato -- boiled
  • 1 Tablespoon Turmeric
  • 1/3 Cup Cottage Cheese
  • 1/3 Cup Monterey Jack Cheese
  • 2 Large Serrano Pepper -- chopped
  • 1 Tablespoon Olive Oil
  • 1 Small Onion -- chopped
  • 1 Teaspoon Lemon Juice
Directions puree cheese, turmeric,and chili in food processor. saute onion in olive oil until transparant. add cheese mixture to onion nand simmer for 5 minutes. meanwhile peel potatoes and arrange them on a platter. remove sauce from heat and stir in lemon juice, pour over potatoes and serve.
