Peruvian   -   Papas Con Tomates (Peru)   adapted from The Whole Chile Cookbook

  • 6 Dried Mirasol Chiles -- seeded and crushed
  • 2 Medium Tomatoes -- diced
  • 1/2 Teaspoon Cumin
  • 1 Large Cooked Potato -- peeled and cubed
  • 1 Medium Cooked Sweet Potato -- peeled and cubed
  • Fresh Cilantro -- to garnish
Directions simmer chilies, tomatoes and cumin for 15 minutes to form a thick sauce. pour over pototoes, toss to coat. Garnish with cilantro and serve.
