Peruvian - Peruvian Papas

Ingredients

- 3/4 Cup Salted Roasted Peanuts
- 1/2 Cup Half And Half
- Salt And Pepper -- to taste
- 2 Medium Rocoto Chiles -- or jalapenos
- 1/2 Cup Monterey Jack Cheese
- 3 Medium Scallion
- 6 Medium Boiling Potatoes -- peeled
- 6 Large Bibb Lettuce Leaves
- 6 Medium Hard-Boiled Egg -- halved lengthwise
- 12 Large Black Olives -- halved lengthwise
- Cilantro -- for garnish

Directions
|
In blender, puree peanuts, half and half, salt, pepper, chiles, cheese and scallions. It should look like mayonnaise if not add more half and half. boil potatoes until done about 20 minutes. drain and cool slightly. cut in half lengthwise. on six individual plates, place lettuce leaf, 2 halves of a potato, cut side down, drizzle with sauce and garnish with egg, olive and cilantro.
