Peruvian   -   Pescado En Escabeche (Peru)   adapted from Latin American Cooking

  • 3 Pounds Fish Fillet
  • Salt And Pepper -- to taste
  • Flour
  • 3 Tablespoons Butter
  • 1 Cup Olive Oil
  • 2 Medium Onion -- chopped
  • 2 Medium Jalapeno -- diced
  • 1/4 Teaspoon Oregano
  • 4 Tablespoons White Vinegar
Directions season fish with salt and pepper and dredge with flour. saute fish in hot butter until lightly browned on both sides. transfer to platter and keep warm. Heat the oil in medium sized saucepan. saute onions and peppers until lightly brown. Add oregano and cook 1 minute. stir in vinegar and toss over fish. Serve.
