Peruvian - Shrimp And Aji Spinach Pie (Peru)

Ingredients

- 2 Cups Spinach -- washed & drained
- 1 Small Onion -- chopped
- 1 Clove Garlic -- finely chopped
- Vegetable Oil
- 1/2 Cup Tomato Juice
- 1/2 Cup Toasted Peanuts -- ground
- 1/4 Cup Mashed Aji Chiles -- or new mexican
- Salt And Pepper -- to taste
- 3 Medium Eggs -- beaten
- 1/2 Cup Cheddar Cheese -- grated
- 1 Dozen Shrimp -- cooked
- 3 Medium Hard-Boiled Egg -- sliced

Directions
|
place spinach in pan with enough water to cover and cook gently for 5 minutes, stirring constantly. remove from heat and drain. in another pan, saute onions and garlic in a little oil. add tomato juice, peanuts, chiles, salt and pepper. cook for 10 minutes. add the beaten eggs to the spinach and mix well. place half of the spinach in an 8 inch square baking pan and sprinkle with half the cheese. next add the onion sauce, shrimp and the hard-boiled egg slices. top with remaining spinach mixture and the rest of the cheese. bake in 300 degree oven for 30 minutes or until brown.
