Puero Rican   -   Arroz Con Maiz   adapted from Recipes From La Isla - Rosado

Ingredients
  • 1/3 Cup Olive Oil
  • 4 Cloves Garlic -- finely chopped
  • 1 Medium Shallot -- finely chopped
  • 2 Teaspoons Oregano -- chopped
  • 2 Teaspoons Cilantro -- chopped
  • 1/4 Teaspoon Cayenne
  • 1/2 Teaspoon Salt
  • 1 Small Yellow Bell Pepper -- chopped
  • 1 Small Tomato -- finely chopped
  • 1/4 Teaspoon Saffron Threads
  • 1/2 Teaspoon Cumin
  • 2 Teaspoons Paprika
  • 2 Cups Long-Grain Rice
  • 2 Cups Corn Kernels
  • 1 1/2 Cups Water
  • 1 Cup Chicken Stock
Directions Heat oil in dutch oven and when hot, add shallots, bell pepper, tomatoes, saffron ,cumin and paprika. Saute for 10 minutes or until the tomatoes are quite mushy. Stir in the rice, corn, water and chicken stock. Bring to a boil. Cover and cook for 20 minutes on low. Fluff and serve.
