Puero Rican - Asopao De Gandules

Ingredients

- 1 Can Pigeon Peas
- 2 Cups White Rice
- 3 Slices Bacon -- Chopped
- 1 Medium Tomato -- Chopped
- 1 Large Onion -- Chopped
- 1 Medium Green Bell Pepper -- Chopped
- 3 Cloves Garlic -- Chopped
- 1 Medium Jalapeno -- Chopped
- 12 Medium Olive -- Chopped
- 1/2 Cup Tomato Sauce
- 1 Teaspoon Oregano
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 2 Tablespoons Anatto Oil
- 8 Cups Chicken Broth

Directions
|
Brown bacon in oil for 5 minutes. Add garlic, tomatoes, both peppers, onion, and oregano. Saute for 8 minutes. Add olives and tomato sauce. Simmer for 5 minutes. Add peas and simmer for 2 minutes. Add rice, broth, salt and pepper. Cook for 25 minutes. Serve.
