Ingredients
  • 1 Can Pigeon Peas
  • 2 Cups White Rice
  • 3 Slices Bacon -- Chopped
  • 1 Medium Tomato -- Chopped
  • 1 Large Onion -- Chopped
  • 1 Medium Green Bell Pepper -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Medium Jalapeno -- Chopped
  • 12 Medium Olive -- Chopped
  • 1/2 Cup Tomato Sauce
  • 1 Teaspoon Oregano
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 2 Tablespoons Anatto Oil
  • 8 Cups Chicken Broth
Directions Brown bacon in oil for 5 minutes. Add garlic, tomatoes, both peppers, onion, and oregano. Saute for 8 minutes. Add olives and tomato sauce. Simmer for 5 minutes. Add peas and simmer for 2 minutes. Add rice, broth, salt and pepper. Cook for 25 minutes. Serve.
