Puero Rican   -   Chicharrones De Pollo (Chicken Cracklin's) (Puerto Rico)   adapted from Puerto Rican Cookbook

  • 3 Pounds Chicken Breasts -- cut up
  • 1 Teaspoon Oregano
  • 3 Cloves Garlic
  • 1/2 Cup Rum
  • 3 Lemons Lemon Juice
  • 1 Cup Flour
  • Salt And Pepper
  • 1/4 Cup Oil
Directions Marinate in rum or brandy and spices for 1/2 hour. Dredge in flour and then fry in hot oil until done.
