Puero Rican - Frijoles Con Cilantro

Ingredients
|
- 1 Pound Dried Kidney Beans
- 3 Bay Leaves
- 4 Strips Bacon
- 1 Large Onion -- chopped
- 2 Large Bell Pepper -- chopped
- 6 Cloves Garlic -- crushed
- 1 Cup Cilantro Leaves -- chopped
- 6 Ounces Tomato Sauce
- 3 Tablespoons Green Olives -- chopped
- 3 Tablespoons Vinegar -- optional

Directions
|
Soak b4eans, drain and rinse. Add water to cover and bay leaves. Boil,. Meanwhile, brown bacon, onion, green pepper and garlic. Add mixture and all remaining ingredients escept vinegar to beans. Reduce heat, cover and simmer 2-3 hours. Add vinegar just before serving.
