Ingredients
|
- 2 Cans White Beans -- cooked
- 1 Medium Chorizo -- chopped
- 3 Cloves Garlic -- finely chopped
- 2 Medium Shallot -- finely chopped
- 1 Small Red Bell Pepper -- chopped
- 3 Medium Tomatoes -- chopped
- 2 Teaspoons Oregano -- chopped
- 1 Small Yellow Squash -- chopped
- 1/4 Cup Olive Oil
- 2 Teaspoons White Wine Vinegar
- 2 Tablespoons Mint -- chopped
- 3 Medium Green Onions
- 2 Tablespoons Cilantro -- chopped
- Salt And Pepper -- to taste

Directions

Drain beans and transfer to bowl, set aside. Saute chorizo until juices begin to appear. Add garlic, shallots, and pepper. Saute 2 mintues, add tomatoes, oregano and 2 cups water. Cook down unti la heavy sauce is formed. Add squash, simmer until squash is soft. Add beans to sauce, cover simmer until beans are hot. In another pot, combine remaining ingredients. Saute utnil green onion has wilted. Pile bean mixture in center of plate and sprinktle on the mint mixture.
