Ingredients

- 1 Small Banana Squash -- peeled & cubed
- 1/3 Cup Olive Oil
- 5 Cloves Garlic -- finely chopped
- 5 Medium Shallots -- thinly sliced
- 1 Small Red Bell Pepper -- chopped
- 2 Tablespoons Cilantro -- chopped
- 2 Tablespoons Parsley -- chopped
- 2 Teaspoons Oregano -- chopped
- 1 Cup Corn -- diced
- 4 Medium Tomatoes -- chopped
- 1 Cup Dry Red Wine
- 2 Cans Red Beans
- 1 Cup Stock
- Salt And Pepper -- to taste

Directions

Simmer squash in enough water to fully cook. j Puree and set aside. Saute in iolive oil: garlic shallots, bel lpepper, cilantro, parsley, oregano and ham. Saute 10 minutes. Stir in tomatioes and squash ans bring to a sizzle. Stir in wine and cook down to a thick paste. Slowly ad stock until you achieve a rich sauce consistency. Add salt and pepper. Lower heat, fodl in beans. simem 12 mintues and serve.
