Puero Rican   -   Habichuelas Rojas Guisadas En Vino Tinto   adapted from Recipes From La Isla - Rosado

  • 1 Small Banana Squash -- peeled & cubed
  • 1/3 Cup Olive Oil
  • 5 Cloves Garlic -- finely chopped
  • 5 Medium Shallots -- thinly sliced
  • 1 Small Red Bell Pepper -- chopped
  • 2 Tablespoons Cilantro -- chopped
  • 2 Tablespoons Parsley -- chopped
  • 2 Teaspoons Oregano -- chopped
  • 1 Cup Corn -- diced
  • 4 Medium Tomatoes -- chopped
  • 1 Cup Dry Red Wine
  • 2 Cans Red Beans
  • 1 Cup Stock
  • Salt And Pepper -- to taste
Directions Simmer squash in enough water to fully cook. j Puree and set aside. Saute in iolive oil: garlic shallots, bel lpepper, cilantro, parsley, oregano and ham. Saute 10 minutes. Stir in tomatioes and squash ans bring to a sizzle. Stir in wine and cook down to a thick paste. Slowly ad stock until you achieve a rich sauce consistency. Add salt and pepper. Lower heat, fodl in beans. simem 12 mintues and serve.
