Puero Rican   -   Jueyes Tortillas   adapted from Recipes From La Isla - Rosado

  • 4 Pounds Crab Meat
  • 1 Teaspoon Black Pepper
  • 1 Lemon Lemon Juice
  • 1 Lime Lime Juice
  • 1 Tablespoon White Vinegar
  • 4 Medium Bay Leaves
  • 1 Tablespoon Olive Oil
  • 6 Cloves Garlic -- finely chopped
  • 1 Medium Onion -- finely chopped
  • 1/3 Cup Dry Sherry
  • 1 Package Tortillas
  • Lettuce
  • Tomatoes
  • Black Olives
  • Avocado
Directions Saute onion, bay leaves and garlic in olive oil, until onion is very soft and just starting to brown. Add remaining ingredients and saute until crab meat is done or heat through. Add crab mixture to a tortilla. Top with lettuce, tomatoes, black olives and other favorite garnishes and serve.
