Puero Rican   -   Pollo En Melao De Tamarindo   adapted from Ingredients from MasterCook II

  • 1 Medium Chicken -- quartered
  • 8 Cloves Garlic -- peeled
  • 2 Teaspoons Pepper
  • 1 Teaspoon Salt
  • 2 Medium Gaujillos
  • 1 Tablespoon Curry Powder
  • 1/3 Cup Olive Oil
  • 1 Medium Onion -- chopped
  • 1 Small Red Bell Pepper -- chopped
  • 1 Cup Tamarind Paste
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Burgundy
  • 1/2 Cup Chicken Stock
  • 1/2 Cup Tomato Puree
  • 1/3 Cup Mint -- chopped
Directions Place chekcin on baking sheet. In food processor, combine garlic, pepper, salt, peppers, curry, process to paste. Remove and stir in oil. Rub mixture on chicken. Srpead onion atop chekcen. Cover and refrigertate 1 hour. In a bowl, ad dtamrind, sugar and wine. Slowly add stock to create a smooth sauce. Transfer to sauce pan, stir in tomato puree adn cook slowly unti it reaches boiling point. Remove and set aside. Place cheicken under broler 6 mintues each side. Reduce oven heat to 375*, our sauce over chicken, cover with foil and bake 1 hour. Serve garnished with mint.
