Puero Rican   -   Puerto Rican Black Bean Soup   adapted from bean banquet

Ingredients
  • 1 Pound Black Beans -- dried
  • 1/4 Cup Olive Oil
  • 2 Medium Onion -- chopped
  • 4 Cloves Garlic -- finely chopped
  • 2 Medium Green Pepper -- chopped
  • 2 Medium Hot Chili Peppers
  • 1 Medium Carrot -- chopped
  • 2 Bay Leaf
  • 1 Teaspoon Oregano
  • 1/2 Teaspoon Cumin
  • 1/4 Teaspoon Cayenne
  • Salt And Pepper -- to taste
  • 2 Tablespoons Vinegar
  • 1 Cup Rice -- cooked
  • 2 Medium Green Onion -- chopped for garnish
Directions cook bean according to directions in 8 cups water until very soft. saute vegetables. add all spices and vinegar. cook until vegetables are soft. combine cook 10 minutes. to serve 1 scoop of rice in bowl and ladle soup over it and top with green onions.
