Puero Rican   -   Salsa Islena Picante   adapted from Recipes From La Isla - Rosado

Ingredients
  • 1/3 Cup Olive Oil
  • 8 Cloves Garlic -- finely chopped
  • 4 Medium Green Onion -- finely chopped
  • 1 Teaspoon Fresh Oregano -- finely chopped
  • 2 Teaspoons Ginger Root -- grated
  • 4 Medium Red Chiles -- finely chopped
  • 1 Cup Tomato Puree
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Cayenne
  • 1 Teaspoon Dark Brown Sugar
  • 1 Tablespoon Dark Rum
  • 1 Lime Lime Juice
  • 1 Medium Tomato -- chopped
  • 2 Tablespoons Cilantro -- chopped
  • Lemon And Lime Wedges -- for garnish
Directions In a saucepan, combine oil, garlic chopped onion, oregano, ginger, chile peppers and saute lightly. Stir in tomato puree, salt, cayenne, sugar, rum and lime juice. Cook slowly for 5 minutes. Then add tomatoes. Simmer for 5 minutes. Remove from heat and transfer to a glass bowl. Fold in cilantro. Allow to cool to room temperature and then refrigerate. Serve chilled.
