Ingredients
|
- 1/3 Cup Olive Oil
- 8 Cloves Garlic -- finely chopped
- 4 Medium Green Onion -- finely chopped
- 1 Teaspoon Fresh Oregano -- finely chopped
- 2 Teaspoons Ginger Root -- grated
- 4 Medium Red Chiles -- finely chopped
- 1 Cup Tomato Puree
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Cayenne
- 1 Teaspoon Dark Brown Sugar
- 1 Tablespoon Dark Rum
- 1 Lime Lime Juice
- 1 Medium Tomato -- chopped
- 2 Tablespoons Cilantro -- chopped
- Lemon And Lime Wedges -- for garnish

Directions

In a saucepan, combine oil, garlic chopped onion, oregano, ginger, chile peppers and saute lightly. Stir in tomato puree, salt, cayenne, sugar, rum and lime juice. Cook slowly for 5 minutes. Then add tomatoes. Simmer for 5 minutes. Remove from heat and transfer to a glass bowl. Fold in cilantro. Allow to cool to room temperature and then refrigerate. Serve chilled.
