Ingredients

- 16 Cloves Garlic -- peeled
- 1 Tablespoon Olive Oil
- 2 Medium Green Onion -- chopped
- 1 Small Onion -- finely chopped
- 1 Stalk Celery -- finely chopped
- 1 Medium Tomato -- finely chopped
- 1 Teaspoon Oregano -- finely chopped
- 1 Teaspoon Mint -- chopped
- 1 Teaspoon Black Pepper
- 2 Teaspoons Cilantro -- finely chopped
- 1 Teaspoon Salt
- 1/2 Cup Sherry
- 8 Cups Chicken Stock
- Cilantro Sprigs -- for garnish

Directions

Broil garlic cloves until slighty charred and mince. In a stockpot, saute garlic, green onion, onions, celery, tomato, oregano, mint, black pepper, cilantro and salt in olive oil for 3 minutes. Add sherry then chicken stock. Cover, simmer for 7 minutes. Serve with a sprig of cilantro on top.
