Ingredients

- 4 Pounds Chicken -- any parts
- 8 Cloves Garlic -- peeled
- 1 Teaspoon Salt
- 1 Tablespoon Oregano -- chopped
- 1 Teaspoon Pepper
- 4 Small Serrano Pepper
- 1 Teaspoon Ginger Root
- 1/4 Teaspoon Saffron
- 1/2 Teaspoon Cumin
- 1/2 Cup Olive Oil
- 2 Teaspoons Paprika
- 3 Large Green Onion -- chopped
- 2 Medium Tomatoes -- chopped
- 1/3 Cup Chicken Stock
- 1/2 Cup Burgundy
- 1 Tablespoon Cilantro -- chopped
- Lemon Wedges -- garnish

Directions

Pat chicken dry, set aside. In food processor combine garlic, satl, organo, pepper, serranos, ginger and saffron. Make paste. Remove and stir in oil. Slpread mixtuer evenly over chicken. Sprinkle with parika, cover and refrigerate over night. in preheated skillet, brown chicken on all sides. Add onions, tomatoes, and burgundy. Cover, cook 35 minutes. Sprinkle with cilantro and garnish with lemon wedges.
