Puero Rican   -   Tortilla De Chorizo   adapted from Puerto Rican Cooking

  • 1/4 Cup Olive Oil
  • 3 Cloves Garlic -- Finely Chopped
  • 1 Medium Onion -- Chopped
  • 3 Medium Potato -- Sliced
  • 1/2 Teaspoon Salt
  • 1 Small Bell Pepper -- Chopped
  • 1/2 Teaspoon Pepper
  • 2 Medium Chorizo -- Chopped
  • 6 Large Eggs
  • 2 Tablespoons Water
Directions In skillet, saute in oil, unpeeled garlic clove (crushed). discard garlic, when brown. Add pottotes to oil and fry until brown. Reove potatoes and pour oil oul minus about 3 tablespoons. ADd onioin, green pepper, chorizo and saute. Cook for 5 minutes. Add potatoes and simmer 2 minutes.
Beat eggs with water, salt and pepper adn pour over mixture in skillet. Make into omlet and cook until eggs set. Flip and cook until golden brown. Serve.
