Puero Rican   -   Tortilla De Papas   adapted from Puerto Rican Cooking

  • 1/4 Cup Olive Oil
  • 3 Cloves Garlic -- Finely Chopped
  • 3 Medium Potato -- Sliced
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 6 Large Eggs
  • 2 Tablespoons Milk
  • 1 Tablespoon Parsley -- Finely Chopped
Directions Saute garlic and potatoes in oil until golden brown. Pour off remaining oil. Beat eggs with milk and parsley. Pour into potatoes. Cook until eggs are set. Season with salt and pepper. Flip and saute the other side until lightly golden. Serve.
