Polish   -   Polish Mushroom And Barley Soup   adapted from The Whole World Loves Chicken Soup by Mimi Sheraton

  • 3 Pounds Chicken -- Cooked And Shredded
  • 10 Cups Chicken Broth
  • 4 Large Black Mushrooms -- Chopped
  • 1/2 Cup Barley
  • 2 Medium Carrot -- Chopped
  • 2 Stalks Celery -- Chopped
  • 1 Tablespoon Dill
  • Salt And Pepper -- To Taste
Directions Bring chicken and stock to a boil. Simmer for 10 minutes, add mushrooms and barley. Simmer for 20 minutes. Add carrots and celery. Simmer for 20 more minutes. Season with salt and pepper and sprinkle in dill. Stir and serve.
