Polish   -   Winter Asparagus Soup   adapted from Sarah Leah Chase's Cold-Weather Cooking

Ingredients
  • 3 Tablespoons Butter
  • 1 Medium Onion -- Chopped
  • 2 Medium Leeks -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 2 Medium Carrot -- Chopped
  • 1 Tablespoon Tarragon
  • 1 Pinch Cayenne
  • 1/2 Cup Parsley -- Chopped
  • 2 Pounds Asparagus -- Chopped
  • 1 Cup White Wine
  • 5 Cups Chicken Broth
  • 3 Tablespoons Dill -- Snipped
  • Salt And Pepper -- To Taste
Directions Saute onions, leeks, garlic and carrots in butter for 15 minutes. Add tarragon, cayenne, parsley and asparagus, saute for 2 minutes. Add wine and broth. Bring to a boil and simmer for 30 minutes. Stir in dill, salt and pepper. Serve or the soup may be pureed and then served.
