Polish - Winter Asparagus Soup

Ingredients
|
- 3 Tablespoons Butter
- 1 Medium Onion -- Chopped
- 2 Medium Leeks -- Chopped
- 3 Cloves Garlic -- Chopped
- 2 Medium Carrot -- Chopped
- 1 Tablespoon Tarragon
- 1 Pinch Cayenne
- 1/2 Cup Parsley -- Chopped
- 2 Pounds Asparagus -- Chopped
- 1 Cup White Wine
- 5 Cups Chicken Broth
- 3 Tablespoons Dill -- Snipped
- Salt And Pepper -- To Taste

Directions
|
Saute onions, leeks, garlic and carrots in butter for 15 minutes. Add tarragon, cayenne, parsley and asparagus, saute for 2 minutes. Add wine and broth. Bring to a boil and simmer for 30 minutes. Stir in dill, salt and pepper. Serve or the soup may be pureed and then served.
