Portugese   -   Chick Pea Soup Alentejo Style   adapted from Food of Spain and Portugal

Ingredients
  • 2 Cans Chick Peas
  • 4 Cloves Garlic -- Chopped
  • 4 Large Onion -- Chopped
  • 3 Tablespoons Olive Oil
  • 3 Medium Potatoes -- Chopped
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Ground Coriander
  • 1 Large Bay Leaf
  • 1 Quart Beef Stock
  • 1/2 Pound Pepperoni -- Chopped
  • 1 Cup Spinach -- Chopped
  • Salt And Pepper -- To Taste
Directions saute onions and garlic in oil for 12 minutes; add potatoes, saute 10 minutes; add thyme, coriander and bay leaf, saute until fragrant; add broth and simmer 20 minutes; add pepperoni, and simmer 5 minutes; stir in spinach, simmer 2 minutes; add chick peas and remaining ingredients, simmer until just warm and serve.
