Ingredients

- 2 Large Chicken Breast
- 1 Large Onion -- Sliced
- 1/4 Bunch Parsley -- Chopped
- 6 Cups Chicken Broth
- 1/2 Cup Rice -- Raw
- 1 Lemon Lemon Juice
- 2 Tablespoons Mint
- Salt And Pepper -- To Taste

Directions

Saute chicken and onion for about 10 minutes until lightly browned; add parsley and broth, cover, simmer 30 minutes; remove chicken and shread, return to pot; add rice, lemon juice, mint, salt and pepper, simmer 20 minutes; serve.
