Portugese   -   Chicken With Mint Rice And Lemon   adapted from Food of Spain and Portugal

  • 2 Large Chicken Breast
  • 1 Large Onion -- Sliced
  • 1/4 Bunch Parsley -- Chopped
  • 6 Cups Chicken Broth
  • 1/2 Cup Rice -- Raw
  • 1 Lemon Lemon Juice
  • 2 Tablespoons Mint
  • Salt And Pepper -- To Taste
Directions Saute chicken and onion for about 10 minutes until lightly browned; add parsley and broth, cover, simmer 30 minutes; remove chicken and shread, return to pot; add rice, lemon juice, mint, salt and pepper, simmer 20 minutes; serve.
