Portugese   -   Cilantro Potatoes   adapted from Food of Spain and Portugal

  • 12 Medium New Potatoes
  • 3 Tablespoons Olive Oil
  • 1/4 Cup Cilanto -- Chopped
  • Salt And Pepper -- To Taste
Directions cook potatoes in enough water to cover; cook for 30 minutes; drain, cool and slice; saute potatoes in olive oil until they start to color about 3 minutes; turn over and saute on other side for about 3 minutes; remove from heat, stir in cilantro, salt and pepper; and serve.
