Portugese - Funchal Fish Chowder

Ingredients
|
- 4 Medium Onions -- Thinly Sliced
- 3 Cloves Garlic -- Finely Chopped
- 3 Tablespoons Olive Oil
- 2 Large Bay Leaves
- 1/2 Cup Madeira
- 1 Can Tomatoes -- Finely Chopped
- 3 Medium Potato -- Chopped
- 2 Tablespoons Parsley -- Chopped
- 4 Whole Cloves
- 1/2 Teaspoon Cayenne
- 2 Quarts Chicken Broth
- 2 Pounds Fish -- See Note
- 1 Tablespoon Salt
- Parmesan Cheese -- To Taste

Directions
|
Saute onions and garlic in olive oil until lightly browned. Add bay leaves, wine, tomatoes, potatoes, parsley, cloves, cayenne and broth. Simmer for 30 minutes. Flake fish into the soup and simmer for 20 minutes or until the fish is done. Add salt. Serve with parmesan cheese and good heavy bread.
