Portugese   -   Ginger Cake   adapted from Food of Spain and Portugal

  • 4 Cups All Purpose Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Ginger
  • 1/2 Teaspoon Clove
  • 1/2 Teaspoon Nutmeg
  • 1 Stick Butter
  • 2/3 Cup Vegetable Oil
  • 1 2/3 Cups Sugar
  • 1/3 Cup Dark Molasses
  • 5 Large Eggs -- Separated
  • 1/3 Cup Madeira
  • 1 Cup Milk
Directions preheat oven to 325 degrees; combine flour; soda, powder and spices; cream together butter, sugar and oil; add molasses and stir well; beat in egg yolks; stir in madeira and milk; beat in dry ingredients; beat egg whites to soft peaks and fold in gently; pour batter into well greased 10 inch tube pan; bake for 1 hour 15 minutes; cool and serve.
