Portugese   -   Green Bean Soup With Mint   adapted from Food of Spain and Portugal

  • 2 Medium Yellow Onion -- Sliced
  • 1 Clove Garlic -- Chopped
  • 3 Tablespoons Olive Oil
  • 2 Medium Potatoes -- Chopped
  • 4 Cups Chicken Broth
  • 1 Pound French-style green beans
  • 1 Cup Water
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Mint
Directions Saute onions and garlic in oil for 5 minutes. Add potatoes and cook for 5 minutes. Add broth, bring to a simmer, cover and cook for 20 minutes. Add beans and water. Bring back to a simmer for 10 minutes. Add salt, pepper and mint. Simmer 2 minutes. Remove from heat and serve.
