Portugese - Green Bean Soup With Mint

Ingredients
|
- 2 Medium Yellow Onion -- Sliced
- 1 Clove Garlic -- Chopped
- 3 Tablespoons Olive Oil
- 2 Medium Potatoes -- Chopped
- 4 Cups Chicken Broth
- 1 Pound French-style green beans
- 1 Cup Water
- Salt And Pepper -- To Taste
- 2 Tablespoons Mint

Directions
|
Saute onions and garlic in oil for 5 minutes. Add potatoes and cook for 5 minutes. Add broth, bring to a simmer, cover and cook for 20 minutes. Add beans and water. Bring back to a simmer for 10 minutes. Add salt, pepper and mint. Simmer 2 minutes. Remove from heat and serve.
