Portugese   -   Grilled Mullet   adapted from Food of Spain and Portugal

  • 3 Cloves Garlic -- Chopped
  • 1/3 Cup Olive Oil
  • 4 Large Red Snapper -- Fillets
  • 1 Stick Butter
  • 1/4 Cup Dry White Wine
  • 1/2 Cup Orange Juice
  • 1 Lemon Lemon Juice
  • Salt And Pepper -- To Taste
  • 1/2 Cup Parsley -- Chopped
Directions steep garlic in olive oil for several hours; brush fish well with garlic oil; melt butter in sauce pan add wine, both juices, salt and pepper; boil uncovered for 20 minutes until reduces to a syrup; preheat broiler put fish on broilerpan and broil 5 minutes on each side; serve the fish with sauce poured over and sprinkled with parsley.
