Portugese - Grilled Mullet

Ingredients

- 3 Cloves Garlic -- Chopped
- 1/3 Cup Olive Oil
- 4 Large Red Snapper -- Fillets
- 1 Stick Butter
- 1/4 Cup Dry White Wine
- 1/2 Cup Orange Juice
- 1 Lemon Lemon Juice
- Salt And Pepper -- To Taste
- 1/2 Cup Parsley -- Chopped

Directions
|
steep garlic in olive oil for several hours; brush fish well with garlic oil; melt butter in sauce pan add wine, both juices, salt and pepper; boil uncovered for 20 minutes until reduces to a syrup; preheat broiler put fish on broilerpan and broil 5 minutes on each side; serve the fish with sauce poured over and sprinkled with parsley.
