Portugese   -   Grilled Shrimp   adapted from Portuguese Cooking by Carol Robertson

Ingredients
  • 2 Pounds Uncooked Shrimp
  • 4 Tablespoons Olive Oil
  • 2 Cloves Garlic -- finely chopped
  • 1 Teaspoon Piri Piri Sauce
  • 1/3 Cup Brandy
  • 1/4 Cup Parsley -- finely chopped
  • 4 Large Skewers
Directions Combine all ingredients in a bowl and marinate overnight. Divide shrimp into 4 portions and thread on a skewer. Grill shrimp for 2 minutes per side or unti just done. Serve over rice.
