Portugese - Kale And Ham Soup (Portugal)

Ingredients
|
- 2 Teaspoons Olive Oil
- 1 Large Onion -- chopped
- 1 Pound Potatoes -- peeled & cubed
- 3 Cans Chicken Broth
- 1 Pound Kale, Collard Or Turnip Greens -- shredded
- 2 Cups Fully Cooked Ham -- cubed
- Salt And Pepper -- to taste
- 1 Can White Beans -- drained

Directions
|
Saute onion in oil. Add potatoes and broth. Boil, reduce heat, cover and simmer 25 minutes. Slightly mash potatoes with masher, Stir in remaining ingredients, simmer uncovered 5 minutes.
