Portugese   -   Kale And Ham Soup (Portugal)   adapted from Betty Crockers New International Cookbook

  • 2 Teaspoons Olive Oil
  • 1 Large Onion -- chopped
  • 1 Pound Potatoes -- peeled & cubed
  • 3 Cans Chicken Broth
  • 1 Pound Kale, Collard Or Turnip Greens -- shredded
  • 2 Cups Fully Cooked Ham -- cubed
  • Salt And Pepper -- to taste
  • 1 Can White Beans -- drained
Directions Saute onion in oil. Add potatoes and broth. Boil, reduce heat, cover and simmer 25 minutes. Slightly mash potatoes with masher, Stir in remaining ingredients, simmer uncovered 5 minutes.
Serves 6
