Portugese   -   Lisbon Baked Hake (Or Cod)   adapted from Food of Spain and Portugal

  • 1 Medium Onion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Large Bell Pepper -- Chopped
  • 3 Tablespoons Olive Oil
  • 2 Large Bay Leaves
  • 2 Tablespoons Parsley
  • 1 Can Tomatoes -- Chopped
  • 1/4 Cup Dry White Wine
  • 1/4 Teaspoon Ground Cloves
  • 1 Can Tomato Paste
  • 4 Large Hake Or Cod -- Fillets
Directions Preheat oven to 350 degrees; saute onion, garlic and bell pepper in oil for 6 minutes; add bay leaves; add remaining ingredients except for fish, simmer for 30 minutes; put fish in casserole dish in a single layer; pour sauce over; bake for 30 minutes; serve with big chunk of chewy bread.
