Portugese - Madeira Onion Soup

Ingredients
|
- 3 Pounds Yellow Onion -- Sliced
- 3 Tablespoons Olive Oil
- 1 Tablespoon Butter
- 6 Whole Cloves
- 1 Teaspoon Paprika
- 5 Cups Beef Broth
- Salt And Pepper -- To Taste
- 4 Large Eggs -- Slightly Beaten
- 1/4 Cup Madeira

Directions
|
Saute onions in oil and butter until lightly browned about 15 minutes. Add cloves, paprika and broth. Cover and simmer for 1 hour. Uncover and simmer for 30 more minutes. Season with salt and pepper. Mix a bit of hot broth into the eggs. Stir into kettle. Cook for 4 minutes. Add Madeira, stir and serve.
