Portugese   -   Madeira Tuna Steaks   adapted from Food of Spain and Portugal

  • 3 Cloves Garlic -- Finely Chopped
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Oregano
  • 1/2 Teaspoon Pepper
  • 3 Tablespoons Olive Oil
  • 4 Large Tuna Steak
  • 4 Large Bay Leaves
Directions Stir together the garlic salt, oregano and black pepper; rub mixture on all sides of fish; place steaks in 9X9 baking dish; drizzle with olive oil; and place one bay leaf on each steak; marinate 24 hours;
place tuna on hot skillet and brown for 6 minutes on each side and serve.
Serves 4
