Portugese   -   Pork With Pickled Vegetables   adapted from Food of Spain and Portugal

  • 3 Pounds Pork -- Cubed
  • 4 Tablespoons Olive Oil
  • 2 Cloves Garlic -- Finely Chopped
  • 2 Tablespoons Paprika
  • 2 Large Bay Leaves
  • 1/2 Teaspoon Pepper
  • 1 Cup Dry Red Wine
  • 1/2 Teaspoon Salt
  • 1 Cup Pickled Vegetables -- See Note
  • New Potatoes -- Boiled (Optional)
Directions Brown pork in olive oil about 10 minutes. Add garlic, paprika, bay leaves and pepper. Saute for 5 minutes more. Add wine and bring to a simmer. Cover and simmer for 20 minutes. Season with salt. Serve with picled vegetables or boiled new potatoes.
