Portugese - Pork With Pickled Vegetables

Ingredients

- 3 Pounds Pork -- Cubed
- 4 Tablespoons Olive Oil
- 2 Cloves Garlic -- Finely Chopped
- 2 Tablespoons Paprika
- 2 Large Bay Leaves
- 1/2 Teaspoon Pepper
- 1 Cup Dry Red Wine
- 1/2 Teaspoon Salt
- 1 Cup Pickled Vegetables -- See Note
- New Potatoes -- Boiled (Optional)

Directions
|
Brown pork in olive oil about 10 minutes. Add garlic, paprika, bay leaves and pepper. Saute for 5 minutes more. Add wine and bring to a simmer. Cover and simmer for 20 minutes. Season with salt. Serve with picled vegetables or boiled new potatoes.
