Portugese   -   Portimao Green Peas   adapted from Food of Spain and Portugal

  • 1 Large Onion -- Chopped
  • 1 Large Red Bell Pepper -- Chopped
  • 1 Medium Chorizo -- Chopped
  • 1 Tablespoon Olive Oil
  • 1 Quart Green Peas
  • 1 Quart Chicken Broth
  • 1 Tablespoon Vinegar
  • 6 Medium Eggs
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Parsley -- Chopped
  • 1/2 Cup Water
Directions saute onion, pepper and chorizo in oil for 10 minutes; add peas, and 1/2 cup of water and simmer for 10 minutes; In another pot, pour in broth and vinegar; slide each egg in to simmering water, poach for 3 minutes; remove from broth; season with salt and pepper, sprinkle with parsely, place peas in bowl and top with poached egg.
