Portugese - Portuguese Bean And Garlic Omelet

Ingredients

- 1 Large Onion -- Chopped
- 3 Tablespoons Olive Oil
- 5 Cloves Garlic -- Chopped
- 1/2 Cup Ham -- Chopped
- 2 Cups White Beans -- Cooked
- 1 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 1/2 Cup Cilantro -- Chopped
- 6 Large Eggs

Directions
|
Saute onion in oil for 7 minutes. Add garlic and ham and saute for 5 minutes. Add beans, salt, pepper and cilantro. Saute for 5 minutes. Beat eggs and pour into pan. Cover the pan and simmer for 7 minutes until the top sets. Cut into wedges and serve.
