Portugese   -   Portuguese Bean And Garlic Omelet   adapted from The Universal Kitchen by Elisabeth Rozin

  • 1 Large Onion -- Chopped
  • 3 Tablespoons Olive Oil
  • 5 Cloves Garlic -- Chopped
  • 1/2 Cup Ham -- Chopped
  • 2 Cups White Beans -- Cooked
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Cup Cilantro -- Chopped
  • 6 Large Eggs
Directions Saute onion in oil for 7 minutes. Add garlic and ham and saute for 5 minutes. Add beans, salt, pepper and cilantro. Saute for 5 minutes. Beat eggs and pour into pan. Cover the pan and simmer for 7 minutes until the top sets. Cut into wedges and serve.
Serves 4
