Portugese   -   Portuguese Bean Soup   adapted from Beans and beans

Ingredients
  • 1 Cup Red Beans -- dried
  • 6 Cups Water
  • 1 Tablespoon Salt
  • 2 Medium Onion -- sliced
  • 2 Cloves Garlic -- finely chopped
  • 1/4 Pound Salt Pork -- cubed
  • 3 Medium Potato -- peeled and sliced
  • 1/2 Teaspoon Allspice
  • 8 Ounces Tomato Paste
  • 1 Teaspoon Salt
  • 3 Cubes Beef Bouillon
Directions soak beans overnight in water. add salt, then cover and cook on medium for 2 hours or until tender. Add remaining ingredients and simmer for 6 hours on low or use crockpot.
Serves 4
