Portugese - Portuguese Shrimp Curry

Ingredients

- 2 Tablespoons Olive Oil
- 2 Large Onions -- finely chopped
- 2 Cloves Garlic -- finely chopped
- 1 Teaspoon Ginger -- finely chopped
- 1/2 Teaspoon Turmeric
- 1/2 Teaspoon Coriander -- ground
- 1/2 Teaspoon Cumin
- 1 Teaspoon Red Pepper Flakes
- 1 1/2 Pounds Medium Shrimp
- 2 Large Potatoes -- cubed
- 1 1/2 Cups Coconut Milk
- 8 Ounces Yogurt
- 1 Tablespoon Lemon Juice
- Salt And Pepper -- to taste

Directions
|
Saute onion in oil. Add garlic, ginger, turmeric, coriander, cumin and hot pepper flakes. Cook for 2 minutes. Do not allow to burn. Add potatoes and coconut milk. Simmer until potatoes are tender. Add yogurt and shrimp. Cook until shrimp is just done. Season with lemon juice, salt and pepper. Serve over rice.
