Portugese   -   Pumpkin Soup   adapted from Food of Spain and Portugal

  • 2 Medium Yellow Onion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Large Butternut Squash -- Cubed
  • 5 Cups Chicken Broth
  • Salt And Pepper -- To Taste
Directions saute onion and garlic in olive oil for 5 minutes; add squash, saute 5 minutes; add broth, bring to a simmer for 20 minutes; season with salt and pepper and serve.
