Portugese   -   Putrid Cake   adapted from Food of Spain and Portugal

  • 2 1/2 Cups All Purpose Flour
  • 1 Teaspoon Ground Cinnamon
  • 1 Teaspoon Ground Anise
  • 6 Large Eggs -- Separated
  • 2/3 Cup Sugar
  • 1 1/4 Cups Vegetable Oil
  • 1 1/4 Cups Honey
  • 1/4 Cup Brandy
Directions Preheat oven to 375 degrees; sift together flour, cinnamon and anise; beat egg yolks and sugar to consistency of mayonaise; drizzle in oil, honey and brandy (in that order); add sifted dry ingredients; beat egg whites to soft peaks, fold into batter; pour into a well buttered tube pan; bake uncovered for 50 minutes.
