Portugese   -   Red Snapper Madeira Style   adapted from Food of Spain and Portugal

  • 2 Large Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 3 Tablespoons Olive Oil
  • 1 Can Tomatoes -- Chopped
  • 2 Large Bay Leaf
  • 1/2 Cup Dry White Wine
  • 2 Tablespoons Parsley -- Chopped
  • Salt And Pepper -- To Taste
  • 4 Large Red Snapper -- Fillets
  • 2/3 Cup Flour
  • 4 Tablespoons Olive Oil
  • 1 Large Lime -- Thinly Sliced
Directions saute onions and garlic in oil until browned; add tomatoes, bay leaves; wine; parsley; salt and pepper; cover and simmer for 30 minutes; remove bay leaves and discard; dredge fish in flour; brown in oil, about 2 minutes per side; serve with sauce ladled artfully over fish - DO NOT drown them. twist lime over fish and serve.
