Portugese - Red Snapper Madeira Style

Ingredients

- 2 Large Onion -- Chopped
- 2 Cloves Garlic -- Chopped
- 3 Tablespoons Olive Oil
- 1 Can Tomatoes -- Chopped
- 2 Large Bay Leaf
- 1/2 Cup Dry White Wine
- 2 Tablespoons Parsley -- Chopped
- Salt And Pepper -- To Taste
- 4 Large Red Snapper -- Fillets
- 2/3 Cup Flour
- 4 Tablespoons Olive Oil
- 1 Large Lime -- Thinly Sliced

Directions
|
saute onions and garlic in oil until browned; add tomatoes, bay leaves; wine; parsley; salt and pepper; cover and simmer for 30 minutes; remove bay leaves and discard; dredge fish in flour; brown in oil, about 2 minutes per side; serve with sauce ladled artfully over fish - DO NOT drown them. twist lime over fish and serve.
