Portugese   -   Roast Pork With Piri Piri   adapted from Portuguese Cooking by Carol Robertson

  • 1 Large Red Bell Pepper -- finely chopped
  • 4 Cloves Garlic -- finely chopped
  • 1 Teaspoon Salt
  • 4 Tablespoons Olive Oil
  • 3 Teaspoons Piri Piri Sauce -- or hot sauce
  • 3 Pounds Pork Loin -- tied for roasting
Directions Place all ingredients except pork in food processor and process to a paste. Rub meat with paste and marinate overnight. Place pork in 350 degree oven for 45 minutes per pound. Serve.
