Portugese   -   Roast Potatoes With Olives   adapted from Portuguese Cooking by Carol Robertson

  • 6 Large Baking Potatoes -- quartered
  • 1/3 Cup Olive Oil
  • 4 Cloves Garlic -- finely chopped
  • Salt And Pepper -- to taste
  • 1/3 Cup Calamata Olives -- sliced
  • 1/3 Cup Parsley -- finely chopped
Directions Toss potatoes in olive oil, garlic, salt and pepper. Arrange in single layer in roasting pan. Place in 350 degree oven for 45 minutes. Turn potatoes twice during the cooking process. Add olives and cook for 10 minutes longer. Sprinkle with parsley and serve.
