Ingredients

- 1 1/2 Pounds Beef
- 1 Quart Stock
- 3 Large Beets -- uncooked
- 1 Medium Onion -- chopped
- 1 Stalk Celery -- chopped
- 2 Medium Carrots -- chopped
- 1 Medium Parsnips -- chopped
- 1/2 Small Cabbage -- shredded
- 1 Bay Leaf
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Tomato Puree
- 1 Teaspoon Dill
- 1 Clove Garlic
- Salt And Pepper -- to taste
- Sour Cream -- garnish

Directions
|
brown the meat. peel and shred the beets. fry all the root vegetables for 10 minutes. add stock. add tomato puree. add cabbage and simmer for 20 minutes. add remaining ingredients except sour cream. serve with a dollop of sour cream on top.
