Russian   -   Caspian Split Peas   adapted from super foods cookbook

  • 4 Cups Stock
  • 2 Large Tomatoes -- diced
  • 2 Medium Carrots -- thinly sliced
  • 1 Cup Cabbage -- shredded
  • 1/2 Cup Green Split Peas
  • 1/2 Cup Barley
  • 2 Cloves Garlic -- finely chopped
  • 1/4 Cup Fresh Parsley -- finely chopped
Directions in 4 quart pot, combine everything but parsley. bring to boil. reduce heat to medium low. cover and simmer 1 1/4 hours until barley is tender. stir in parsley and serve.
