Russian - Chickpea And Onion Stew (Tadzhikistan)

Ingredients
|
- 1 Can Chickpeas
- 2 Cups Vegetable Broth
- 1/3 Cup Olive Oil
- 4 Large Bermuda Onion -- chopped
- 2 Large Tomatoes -- chopped
- 1/2 Teaspoon Crushed Red Pepper
- 1/2 Teaspoon Ground Coriander
- 1/2 Teaspoon Saffron -- diluted in
- 1 Tablespoon Warm Water
- 1/2 Teaspoon Cumin
- 1/2 Teaspoon Paprika
- 1/4 Teaspoon Cinnamon
- Salt -- to taste

Directions
|
Heat oil in dutch oven, add onions and cook until lightly colored about 12 minutes. Bring chickpeas and stock to a boil and add cooked onions. Add remaining ingredients, cover, simmer for 20 minutes. Serve.
