Russian   -   Cumin Chicken With Pasta Squares (Uzbekistan)   adapted from Sephardic Cooking by Copeland Marks

  • 3 Tablespoons Olive Oil
  • 2 Medium Onions -- finely chopped
  • 1 Pound Chicken -- cubed
  • 3 Tablespoons Water
  • Salt -- to taste
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Pepper
  • 2 Tablespoons Tomato Paste
  • Won-Ton Wrappers
Directions Heat oil in pan. Add onions and fry over moderate heat for 2 minutes. Add chicken and fry for another minute. Add water, salt, cumin and pepper. Cover and cook for 10 minutes. Stir in tomato paste and cook for 2 more minutes. Set aside and keep warm. Using wrappers, use 1 tablespoon of chicken mixture to form pasta squares. Drop in boiling water and simmer for 7 minutes. Serve.
