Russian   -   Georgian Beef And Rice Soup   adapted from Please to the Table

Ingredients
  • 1 Pound Lean Beef
  • 8 Cups Beef Stock
  • 3 Tablespoons Unsalted Butter
  • 2 Medium Onions -- finely chopped
  • 1 Tablespoon Flour
  • 6 Ounces Tomato Paste
  • 6 Large Plum Tomatoes -- chopped
  • 1/4 Cup Rice -- uncooked
  • 1/4 Teaspoon Tarragon
  • 1/4 Teaspoon Basil
  • 1/4 Teaspoon Mint
  • 2 Teaspoons Paprika
  • 1/2 Teaspoon Crushed Red Pepper
  • 1 Teaspoon Ground Coriander
  • 1/4 Teaspoon Fenugreek Seed -- ground
  • 2 Teaspoons Tamarind Paste -- diluted in
  • 1 Lemon Lemon Juice
  • 3 Cloves Garlic -- finely chopped
  • 1/4 Cup Walnuts -- ground
  • Salt And Pepper -- to taste
  • 1/4 Cup Cilantro -- chopped
  • 1/4 Cup Parsley -- chopped
  • 1/4 Cup Basil -- chopped
  • 1/4 Cup Dill -- chopped
Directions In large pot, bring meat and stock to boil.
Cover, reduce heat, simmer 1 hour. remove and shred meat, keep stock warm
Melt butter in skillet Saute onions 10 minutes. Add flour, stir 1 minute, add 1/2 cup stock, stir until smooth. Add toamto paste and tomatoes, whisk together and add back into stockpot. Add rice, simmer covered 10 minutes. Add remaining ingredients except fresh herbs. Simmer 15 minutes. Add fresh herbs, heat through and serve.
